The peanut butter!!!
That was me, trying to stay away from the PB. I had a piece of toast & pb for a snack and I just wanted more, more & more.
Today was an ok nutrition day, but the original post title for today was IMMA Tired, then it turned into IMMA Really Tired. Then I came home craving some snackage and that turned into me prying myself away from that PB, hence the final title. It was just so good :)
I had my usual egg & cheese sandwich-thin with my cup ‘o joe for breakfast. I needed some more joe so we walked to Einstein’s only to find out the Hazelnut coffee was gone – there was none. I was sad, but I survived with their breakfast blend.
Then, the “Rosca” attacked! Or tried to at least. The student workers are awesome and made Mexican Hot Chocolate and brought a Rosca to celebrate the Dia de los Santos Reyes. When the Kings travelled to meet Baby Jesus and you can read all about it here. I had a tiny little slice and a cup of the choco, but I didn’t get the Baby Jesus :(
For some snackage I had a chobani yogurt with some quinoa – pretty good idea - thanks pbfingers!
I followed that with some leftover potato hash(sautéed potatoes, onions, green peppers & mushrooms) served on a bed of spinach with some turkey pastrami on the side for lunch. Delish!
Then the little energy I had started to plummet and I was thinking about asking Hubby to pick us up something for dinner, but then I said no. I’ll see what I can make.
I decided on a Shrimp & Quinoa stir-fry to try out the Panda Express Orange sauce that I picked up this week. The goods:
I have to admit, the panda reminded me of this video:
Of course, I could not say no to the Orange Panda. It was an impulse buy and when I looked at the nutrition info, I decided it might have too much sugar.
The meal came together easy-peasy. I just threw everything in the pan like this:
Then I added the shrimp and about 4 T of the Panda sauce and served it over some lettuce.
Again, delish!
Now I’m off to try and relax some before sleepy time :)
