The Salad Case: Coconutty ed.

Workout: 40 min Continuous Flow Yoga + 20 min interval run

Jason does it again, he sets up a practice that really makes you feel strong after you finish. Even if you can't yet handle all the poses! I end up doing a lot of planks when I realize that I can't go all pretzel-ie and such - true story, the man turned into half a pretzel today. 'Twas most impressive!


Yes, I know it's been 3+ weeks since I've written on this lil' blog. I might credit it to the sugar-induced comma that I fell under in that beautiful San Francisco fog! No one could identify me as the culprit who may have enjoyed one too many of these little gems:


I can vouch that the Salted Caramel Mocha is highly addictive, so proceed with caution!


RC had as many (if not more) as I did while we enjoyed all that SF has to offer, but it was so cute seeing him justify the little indulgence. You see, we were in CA. In CA, they actually post the calorie content and he was none too happy about the 420 per/grande tag! So he thought and thought, "and surely a tall, nonfat, half the syrup, no whipped cream would bump it down to the 200cal range, right?" Maybe it didn't have all the yummy glory, but he could handle it.


He's going to be thrilled to know that thanks to the online nifty calculator, he can add back the missing half of the syrup and still be at 220! Who knew no whipped cream = 80 cal saved!

I really wish Texas would get on the bandwagon and make businesses post calorie content on their menus. It may not be 100% accurate, but it at least gets you in the ball park.

Does your state post this information? Would it make you think twice about enjoying a grande salted caramel mocho with whipped cream?


Now, back to the regularly scheduled blog post - my salad case!

The Coconutty ed. contained the following:

  • couple handfuls spinach
  • 3 handfuls roasted veggies: broccoli, butternut squash, carrots
  • a handful of almonds
  • a tablespoon of homemade red pepper hummus
  • a sprinkling of unsweetened coconut (yum!)

I roasted some butternut squash and carrots last night and they tasted incredible! 35+ min at 375 and so much flavor. The coconut and almonds really played well with the sweetness and brought everything together. The hummus was a last minute deal because I had left the jar in the fridge at work over the weekend and *fingers crossed* I was hoping it was still edible since hummus has a short shelf-life. Why hummus, why???

I know I've been MIA and posting sporadically, but I'm really going to try and buckle down so I can be more consistent in general! I have a couple of ideas that I really want to follow through on, so here's to getting things done!


Do y'all have any problems with consistency? Any tips on following through?

Haha, I think that internet has a mind of it's own sometimes :)
