The Snowpocalypse is Here

I live in El Paso, the Sun City. This storm is being called the Snowpocalypse. Nuff said!

We are hoping for a snow day tomorrow, maybe we don’t need to go into work. Fingers crossed!!! FYI, EP is not equipped for any snow storms so if we get anything over an inch, chances are the city will close down.

Today was a weird one. I had a great interval workout, followed by a wholesome breakfast. Then out of nowhere, this happened.

That’s right, my friends. I got attacked by a well-meaning co-worker intent on sharing some Girls Scout cookies.

Oh the horror!

Seriously, the only saving grace was I had a salad for lunch.

Then, I came home and was Miss Snacky McGee. I have no idea what’s up with me. Oh wait, maybe it’s all the sugar I consumed before 10:00 AM? Ya think?

Tomorrow will be a better day, I hope. I’m really going to try to cut back on the sugar intake in the AM.

Do you guys have any good ideas for keeping these cravings under control? Whatever I’m doing does not seem to be working!

On to a hearty dinner recipe which came together in a jiffy. Don’t be dismayed by the picture, I really need to work on my camera skills!

Acorn Squash Soup

  • 1 acorn squash
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 3-4 slices bacon
  • 2/3 cup sausage
  • 1 cup chicken broth
  • 1 cup milk
  • 1/4 cup half-n-half
  1. Cook the acorn squash as you like. I put it in the microwave for about 5-7 minutes until it’s tender and can be scooped out.
  2. Sautee the onions, bell peppers, sausage and bacon until fully cooked.
  3. Add the squash, broth, milk and half-n-half and mix.
  4. Add salt and pepper as desired.
  5. Enjoy :)

Now I’m off to read my Fitness magazine which arrived in the mail today. It’s like Christmas in February.
