Let’s focus on the positive, though - I get to spend the day with my favorite peeps, then I get to do it all over again tomorrow.
It’s so cold, I didn’t even want to venture out to take pics. I’ll try to do so tomorrow, but I won’t promise anything.
My work already cancelled classes, partly do to save energy and gas because we’ve been doing the rolling blackouts throughout the city. Boo!
We’ve been told to conserve as much energy and gas as possible, so in that effort I had to change up my Tilapia plans. I started thinking and I got an idea from Kimberly so I set out my plan and here are the results:
Chorizo Tilapia over Asparagus & Grits
- 1 lb tilapia filets
- 3 chorizo links
- 1/4 cup green onions
- Asparagus, cooked
- 3 packets instant grits
- Sauté the chorizo links until almost done
- Add the tilapia and green onions and cook on both sides
- Steam the asparagus and add some butter
- Cook the grits as directed
- Put everything together and enjoy :)
I’ve kidnapped my Mama and this was more than enough for the three of us. The chorizo worked really well with the tilapia and I was surprised how quickly it came together. I think I was done in less than 15 minutes. Score!
The doggies didn’t even know what was going on.
I think they were just intrigued by the scent of chorizo in the air.
Doesn’t he look like wouldn’t harm a fly.

Off to enjoy some more hot chocolate, the weather wills it so :)
